While chicken is a common filling for these enchiladas, you can also use other proteins like ground beef, pork, or beans. Ensure that the protein used is naturally gluten-free and that there’s no cross-contamination during cooking.

These steps on how to make the perfect chicken enchiladas are very easy. You can make it your way or my way as I am using every ingredient completely from scratch.

- Shredded white cheese
- Shredded cheddar cheese
- Cooked and shredded chicken breasts

FULL INSTRUCTIONS WITH STEPS FOR GLUTEN FREE CHICKEN ENCHILADAS RECIPE
First Step: Prepare Your Ingredients
Get ready all the ingredients for making chicken enchiladas.
Since I made everything from scratch, it was easier for me to prepare them. You can also do the same if you have plenty of time.
If you have remaining enchilada sauce from your pantry, there’s no need for any enchilada seasoning or spices.
Prepare the cooked chicken by shredding it carefully by hand or you can use a fork to pull them apart.
Also, ready your shredded cheese at home so it won’t leave any starch from the whole cheese.
At the same time, preheat your oven to 350°F (175°C).
Second Step: Base Of The Casserole
Place at least 2 scoops of your enchilada sauce in the bottom part of the pan. Spread it all over until the sauce covers up the whole base.
Third Step: Roll The Tortillas
In this step, make sure you have your shredded cheese, chicken, and tortillas ready in a bowl.
Place a bit of shredded chicken in a corner of your tortilla.
Add your shredded cheese and a good amount of sauce on top of the chicken. Roll them up and carefully place them into the baking dish making sure they will not open.
Fourth Step: Topping Up
Pour the remaining enchilada sauce over the top of the assembled tortillas in the baking dish.
Add the shredded white and cheddar cheese on top of the enchiladas and prepare to bake.
Fifth Step: Bake
Bake the enchiladas in the preheated oven for about 20-25 minutes or until the enchiladas are heated through and the cheese is melted and bubbly.
Additionally, you can cover the baking dish with foil but I prefer not to.
Once ready, serve with a lemon, sliced avocado or guacamole, and sour cream.

- Sauce consistency – if your red enchilada sauce is too thick, you can thin it out with a little chicken stock or water to make it easier to pour over the enchiladas.
