There is culinary lavender, which is safe to eat. It is specially grown and processed for use in cooking and baking. You can buy it already dried to add lavender flavor to dishes like lavender lemonade, lavender latte, and even lavender martini. Those are the usual drinks that people use culinary lavender buds for.

Easy Homemade Lavender Syrup

Creating lavender syrup has been a great surprise in my kitchen journey. I never realized how versatile it could be in various recipes.

As someone dedicated to clean eating, discovering this lavender-infused syrup has been a real game-changer. It’s terrific for sweetening coffee and tea, offering a natural alternative to refined sugars. 

Ways To Use Lavender Syrup

Since this simple syrup is made with culinary lavender, you can use it for your:

  • Coffee and Lattes: Use it as a sugar syrup for coffee and latte, just like a simple syrup.
  • Lavender Cocktails: Not only can it be added to your favorite drinks, but this syrup can also be used in your lavender cocktails that are usually served at parties or holidays. 
  • Lavender Iced Tea or Lemonade: This lavender-infused simple syrup is also perfect for lavender mocktail and lemonade, adding a refreshing lavender flavor to these drinks.
  • Pancakes and Waffles: If you don’t have maple syrup at home, drizzle this lavender syrup over your pancakes and waffles for a little floral change in flavor.
  • Cheesecake and Cakes: This syrup mixture can flavor your cake frosting. You can create cakes and even a protein cheesecake with a lavender flavor.

How To Make Lavender Syrup Recipe

You only need four ingredients to make this lavender syrup recipe. The end result is a perfect thick syrup consistency with a floral flavor from the lavender flowers. With my step-by-step process, you can easily make it at home, even if you are just a beginner.

This recipe is straightforward, and I even prepared a video for you to watch how I made it.

Kitchen Gadgets:

  • Cooking Pot: Use a medium-sized cooking pot or saucepan to simmer the water and sweetener mixture for the lavender syrup. 
  • Measuring Cups: Measuring cups are essential for putting the right amount of water and sweetener to use for this recipe.
  • Whisk: Instead of using a rubber spatula, a metal whisk helps ensure the sugar dissolves evenly to achieve smooth syrup consistency.
  • Strainer: Use a small strainer to strain the lavender flowers from the infused liquid after simmering.

Lavender Syrup Ingredients:

  • Lavender (Food-Grade): Food-grade lavender is always advised to use for any culinary uses. 
  • Powdered Sweetener: You can use any sugar alternatives you prefer for the sweetener. I am using Allulose powdered sweetener for this recipe.
  • Water: This serves as the base liquid for lavender syrup. 
  • Xanthan Gum: Xanthan gum is an optional ingredient used in small amounts to slightly thicken the lavender syrup.

FULL INSTRUCTIONS WITH STEPS FOR HOMEMADE LAVENDER SIMPLE SYRUP RECIPE

First Step: Prepare All Ingredients

Prepare all the ingredients. Start by measuring the amount of water and sweetener you will use for the batch of lavender syrup you are making.

For the sweetener, I suggest using allulose, monk fruit, or xylitol, as those are the best sugar alternatives instead of white sugar for cooking and baking. If you would like your syrup to be thicker, don’t forget to prepare the xanthan gum.

Second Step: Start the Base

Switch your stovetop with the saucepan on it, add the sugar and water, and mix with a metal whisk until the sweetener dissolves.

Step-by-step process of adding ingredients into a pot: 1) Pouring liquid, 2) Adding a cup of powder, 3) Mixing the contents with a whisk.

Third Step: Add Lavender

Prepare your lavender buds or flowers and add three tablespoons to the water and sweetener mixture while it simmers.

After 15 minutes, strain most old flowers using a small strainer.

Fourth Step: Xanthan Gum

Add Xanthan and one tablespoon of fresh lavender to color the syrup. Mix and let the Xanthan dissolve and switch off the heat.

Close the lid and let it steep for 30 minutes. After it is done, strain the syrup using a fine mesh strainer.

TRICKS AND TIPS FOR MAKING THIS RECIPE:

  • Experiment with ratios: Adjust the ratio of lavender to water and sugar depending on your taste preference. More lavender will yield a stronger flavor, while less will be more subtle.
  • Infusion Time: The longer you let the lavender steep in the syrup, the stronger the flavor will be. Experiment with different steeping times to find your preferred intensity.
  • Straining: Ensure you strain the lavender flowers thoroughly after steeping to remove any small pieces that could alter the texture of your syrup.
