  • 12 Oz Yellow Baby Potatoes
  • 8 Oz Baby Carrots
  • 1/2 Piece Onion peeled and chopped into quarters

  • 1/2 teaspoon Black Pepper
  • 1 Sprig Rosemary
  • 2 Sprigs Thyme

Instructions

  • Dry the rump roast with paper towels and gather the carrots, potatoes, onions, herbs, and seasonings so everything is ready to assemble.
  • Set the roast flat in the crock pot and coat all sides with salt and pepper, pressing lightly so the seasoning sticks.
  • Arrange the carrots, potatoes, and quartered onions around the roast so they cook evenly and absorb the juices.
  • Lay rosemary and thyme on top of the roast, then pour beef broth over the meat and vegetables to add flavor and moisture.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours until the roast is fork-tender, then serve with the vegetables and cooking juices.
