  • Cup Broccoli Florets
  • ¼ Cup Onion grated
  • ½ Cup Carrots diced
  • 1 Rib Celery diced
  • ½ Cup Vegetable Broth
  • ¼ Cup Water
  • 3 Tablespoons Butter cubed
  • ¼ Cup All-Purpose Flour
  • 1 Cup Whole Milk
  • ¼ teaspoon Salt
  • 1 Pinch Pepper
  • ¼ Cup Shredded Cheddar Cheese

Instructions

  • Wash, peel, and dice the vegetables, then measure the broth, water, milk, and seasonings so everything is ready to go.
  • Add potatoes, broccoli, onion, carrots, celery, broth, and water to a pot, bring to a boil, then simmer until tender, stirring occasionally.
  • In another pan, melt butter, whisk in flour, cook briefly, then slowly add milk and whisk until thick and creamy.
  • Stir the creamy sauce into the vegetables, simmer until slightly thickened, then add cheddar and stir until melted before serving.

  • Choose the right broth. Vegetable broth works well for a clean version, while chicken broth adds extra depth. A good broth makes the soup flavorful without relying on heavy seasoning.
