  • Preheat the oven to 350°Fahrenheit (180°Celsius), whip the egg whites, and beat the yolks with sweetener until creamy.
  • Mix the pumpkin paste, spices, psyllium, almond meal, and water into the yolks, fold in the whites, spread into the tray, and bake for 13–14 minutes.
  • Flip the sponge onto fresh parchment, cool completely, then whip the cream with sweetener until firm.
  • Layer sponge, whipped cream, and cinnamon in two glasses, then chill for 30 minutes.

Notes

  • Pumpkin Spice Note: To make your own pumpkin spice from scratch, mix 4 tablespoons cinnamon, 1 tablespoon ginger powder, 1 tablespoon cardamom, 2 teaspoons ground cloves, 2 teaspoons nutmeg, and 1 tablespoon allspice together. This makes 50 half-teaspoon servings. Keep the rest sealed in a small jar and use it whenever a recipe calls for pumpkin spice.
  • Room temperature egg whites whip to a larger volume and more stable peaks than cold whites straight from the fridge. Take the eggs out at least 20 minutes before starting so the whites are genuinely at room temperature before the hand mixer turns on.
  • You can replace the two parfait glasses with any clear cup, ramekin, or glass container that shows the layers from the outside. A clear vessel is always the better choice at a two-person table setting where the visual layering is part of what makes this dessert worth making.
