Creamy Cauliflower Rice Cheese Mash

This cauliflower rice recipe is straightforward, simple yet delicious, and most importantly, the portions are enough to serve a person or two. Cheesy cauliflower rice is low-carb, which gives the same satisfaction and taste as classic cheesy meals. With only a few ingredients, you can already have the best side dish.

  • 1 Cup Cauliflower Rice
  • 1 Tablespoon Butter
  • 2 Tablespoons Cream Cheese
  • 1/4 Cup Shredded Cheese
  • 2 Garlic cloves

Instructions

  • Since we will only be needing the florets, remove them from the stem. Prepare the blender to make a rice-like consistency. Set aside other ingredients for the next steps.
  • Turn on your blender or food processor. Add your cauliflower together with cold water. Blend until it reaches the right texture and consistency.
  • Put your skillet or pan on top of the stove, and turn on the fire to medium heat. Add in butter and once melted, sauté the garlic.
  • Add the cauliflower rice to the pan and season with salt and pepper. Cook for 3-4 minutes
  • Once the 4 minutes is up, add cream and cheese. Mix until well combined. Continue to cook the cauliflower for another 3-4 minutes. Do not overcook. You can even fill up your casserole, add extra cheese and broil it for few minutes for that extra crunch.

Notes

  • Frozen Cauliflower: Use fresh cauliflower to ensure the quality of the meal. If you are going to use frozen pieces, make sure you thaw them fully or microwave.
  • Add Flavor: Using herbs and spices or even sauces like soy sauce or pesto can boost the flavor of the dish.
  • Steam: Steam it to retain the nutrients from cauliflower.
