When I want to make my drinks feel special and calming, I think of lavender. But have you ever bought a bottle of lavender syrup from the store, used just a little, and ended up throwing the rest away? That used to happen to me. I would buy a big bottle but only need a small amount, which felt wasteful. That’s why I love making my own lavender syrup at home in small batches. It’s just the right amount for a few drinks, so nothing goes to waste.
Start by measuring out your water, sweetener, and lavender buds. Gather all your tools, so you have everything you need within reach. This way, you will be prepared while the syrup is boiling.
Set the temperature to medium heat. In your pot, bring the water and sugar to a gentle boil. Once it’s simmering, add the lavender buds and stir. Let it cook for about 15 minutes, allowing the flavors to blend.
Once the syrup has simmered and aromatic, strain out half of the lavender buds to keep the flavor balanced. If you like a stronger lavender flavor, you can keep more buds in the syrup.
For the syrup to have a thicker consistency, now’s the time to add xanthan gum. Just sprinkle a small amount and whisk it in until dissolved.
Turn off the heat and let the syrup steep for about 30 minutes. Cover the pot with a lid. This will infuse the flavor even more.
