Ingredients

  • 2 Pieces Chicken Breasts boneless, skinless
  • 2 Tablespoons extra-virgin olive oil
  • ½ Tablespoon Lemon Juice
  • ½ Piece Lemon Zest
  • 2 Cloves Garlic minced
  • ½ teaspoon Dried Oregano
  • ½ teaspoon Dried Thyme
  • ¼ teaspoon Salt
  • 1 Pinch Black Pepper freshly ground

Instructions

  • Mince garlic, zest and juice the lemon, measure ingredients, and preheat grill to medium-high.
  • Whisk olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper.
  • Coat chicken with marinade and refrigerate 30 minutes to 4 hours.
  • Grill 6–7 minutes per side to 165°Fahrenheit (75°Celsius), then rest 5 minutes before serving.

Notes

  • Do not skip the resting time: Cutting into the chicken right off the grill lets all the juices run out. Five minutes of resting makes a big difference in how moist the final result is.
  • Use fresh lemon for the best flavor: Bottled lemon juice works in a pinch, but fresh lemon juice and zest give the marinade a brighter, cleaner taste.
  • Oil the grill before heating: Oiling cold grates and then heating them helps prevent sticking better than oiling a hot grill.
  • Check the temperature, not just the time: Grills vary in heat, and chicken breasts vary in size. A meat thermometer takes the guesswork out and keeps the juicy chicken safe to eat.
