Instructions

  • Start by gathering all your ingredients to make sure everything is ready to go. You’ll need almond flour, sausage, sour cream, and shredded cheese. At the same time, preheat your oven to 390 Fahrenheit (200 Celsius).
  • Make sure to remove the sausage from its casing. This step is important because it allows the sausage meat to mix well with the other ingredients.
  • In a large mixing bowl, combine the sausage meat, almond flour, sour cream, shredded cheese, and seasonings. You can add a bit of garlic powder or fresh herbs like oregano if you like extra flavor.
  • Use your hands or a spoon, and mix everything together until well combined. Be gentle to avoid overmixing, which can make the meatballs tough. Once mixed, form the mixture into evenly sized balls with the help of an ice cream scoop.
  • Place the meatballs onto the cast iron, spaced out evenly. Bake for 25 minutes at 390 Fahrenheit (200 Celsius), or until they are golden brown and cooked through.

Notes

  • Don’t Overmix: Overmixing the meatball mixture can make it tough. Just mix until everything is combined.
  • Line Your Tray: Instead of cast iron, you can also use baking sheet covered with parchment paper or a silicone baking mat to prevent sticking and make clean-up easier.
  • Season Generously: Be sure to season your meatballs well to bring out the best flavors.
