  • Gather your almond flour, vanilla whey protein powder, butter, baking powder, and egg yolk. Having everything ready before you start will make the process smoother.
  • Mix the almond flour, protein powder, baking powder, and salt in a large bowl. In a separate bowl, cream the butter and egg yolk until smooth. Slowly combine the dry ingredients with the wet ones, mixing until a soft dough forms.
  • Take small pieces of dough and roll them into logs. Then, gently bend each log into a crescent shape. Place the crescents on a baking tray lined with parchment paper.
  • Bake the cookies at 320 Fahrenheit (160 Celsius) for about 10 minutes, or until they are golden around the edges. Let them cool completely before handling, as they will firm up as they cool. Sprinkle some powdered sugar on top.

  • Don’t Over-Mix: When combining your ingredients, be gentle. Over-mixing can make the cookies tough instead of crumbly.
