Ingredients

  • ½ Cup Strawberries sliced
  • ½ Cup Blueberries
  • ½ Cup Heavy Cream
  • ¼ Cup Cream Cheese softened
  • 1 tablespoon Powdered Sweetener or Sugar
  • ½ teaspoon Vanilla Extract
  • Crushed Almonds or Cookie Crumbs - Optional

Instructions

  • Wash and drain the blueberries and sliced strawberries. Set out the heavy cream, cream cheese, vanilla, sweetener, and any crushed cookie or almond toppings.
  • Beat softened cream cheese with powdered sweetener and vanilla until completely smooth and creamy.
  • Whip the cold heavy cream until stiff peaks form, giving your dessert a light, airy texture.
  • Gently fold the whipped cream into the cream cheese mixture until fluffy and mousse-like.
  • Layer the cream mixture with berries in dessert cups, top with cookies or almonds, and chill for at least one hour before serving.

Notes

  • Chill before layering: Cold pudding holds its shape better and keeps the berries from getting mushy too soon. This also gives the dessert a refreshing bite.
  • Use a mix of berries for flavor and color: Strawberries, blueberries, and raspberries make the cups look beautiful and taste more interesting.
  • Whip the cream until soft peaks form: Over-whipping can make it grainy, while soft peaks keep the topping smooth and airy.
  • Assemble just before serving for the freshest result: This keeps the berries vibrant and prevents the pudding from becoming watery.
