  • Pounds Large Butternut Squash seeded
  • ½ Tablespoon Olive Oil
  • 1 Pinch Salt kosher
  • 1 Pinch Black Pepper
  • Cup Parmesan half of ¾ cup
  • 2 Tablespoons Greek Yogurt half of ¼ cup
  • ¼ teaspoon Garlic Powder
  • ½ Stalk Scallion sliced
  • 2 Tablespoons Pecans or Walnuts, toasted

Instructions

  • Preheat oven to 425°Fahrenheit (220°Celsius), brush the squash with olive oil, season, and prepare it for roasting.
  • Roast the squash for 55–70 minutes until soft and easy to pierce with a fork.
  • Switch the oven to broil, remove the squash flesh, and keep the shell intact for filling.
  • Combine the squash with Parmesan, Greek yogurt, garlic powder, salt, and pepper until smooth.
  • Fill the squash shell, broil for 1–2 minutes, then top with nuts and scallions before serving.

Notes

  • Mash carefully: Use a food processor, a potato masher, or a simple fork to make the pumpkin mash smooth and creamy. Add the ingredients gradually to get the perfect texture without making it too runny.
  • Mind the moisture: Some pumpkins, like sugar pumpkins, can release more water when roasted. Drain excess liquid or cook a little longer to make your mashed pumpkin smooth and not watery.
