Walking Taco Casserole Recipe

If you're looking for a fun and easy way to bring the delicious flavors of a taco into a simple, one-pan meal, this walking taco casserole recipe is perfect. Fritos and corn chips changed into something even better. It’s a quick weeknight meal that feels like a treat, and what I love most about it is how customizable it is. Even when you're feeding yourself or making a small batch for two, this casserole is satisfying without being overwhelming.

Ingredients

  • 1,5 Cups Ground Beef
  • 1 Tablespoon Taco Seasoning
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cheddar Cheese
  • 1/2 Cup Mozzarella Cheese
  • 1 Lettuce Leaf
  • 2 Taco Cups
  • 1/4 Cup Tomatoes
  • 1/2 Cup Avocado
  • 1/4 Cup Black Olives
  • Fresh Cilantro

Instructions

  • Start by gathering all your ingredients and tools. Preheat your oven to 350°Fahrenheit (175°Celcius), and get ready to assemble the dish.
  • In a cooking pan or a skillet, brown the ground beef over medium heat. Once it’s fully cooked, drain any excess grease, and stir in the taco seasoning. Let it simmer for a few minutes so the flavors meld together.
  • In your casserole dish, spread a layer of seasoned beef or taco meat on the bottom. Then, add a layer of sour cream, followed by shredded cheese and mozzarella cheese.
  • Pop the casserole into your preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly. This gives the casserole time to heat through and for the flavors to blend together.
  • Once out of the oven, let it cool for a minute. Then top it with your favorite taco toppings like lettuce, tomatoes, avocado, black olives, and fresh cilantro.

Notes

  • Don’t overbake the casserole; you want the cheese melted, but not too browned.
  • Customize the spice level to your taste. Add jalapeños, salsa or hot sauce if you like a little heat.
  • If you’re low-carb, swap the Fritos for a keto-friendly option like pork rinds.
