These smothered pork chops in a creamy gravy are the kind of skillet dinner that feels far more involved than it actually is. Two bone-in pork chops are seared golden brown, placed into a rich coconut flour gravy with caramelized onions and bell peppers, and simmered until the pork is tender all the way through. One large skillet, two proper servings, nothing left over.

I cook for two, and I rarely want four pork chops on the table at once. Making a full-batch version of this recipe is generous, but what I actually want on a Tuesday evening is two chops, a pan of gravy, and nothing left over to reheat. This is that version, and it took a few tests to get the gravy quantity right for just two servings.

Detailed Directions for the Best Pork Chop Onion Gravy

One: Set Up Everything Before the Pan Goes On

Get the pork chops, coconut flour, all spices, olive oil, butter, onion, bell peppers, chicken broth, and cream out and within reach. Slice the onion and both bell peppers now so they are ready the moment the pork chops come out of the pan. Mix the coconut flour, seasoned salt, lemon pepper, cumin, cayenne, salt, and pepper together in a shallow bowl until evenly combined.

Two: Coat and Sear the Pork Chops

Pat the pork chops dry with paper towels, then coat each one in the flour mixture on all sides, pressing lightly to coat and shaking off the excess. Three: Caramelize the Vegetables

Add the remaining butter to the same skillet over medium heat and let it melt into the drippings. Add the sliced onion and both bell peppers and cook for about 10 minutes, stirring occasionally, until softened and lightly caramelized at the edges. Remove and set aside with the pork chops.

Four: Build the Gravy

Sprinkle the coconut flour into the remaining pan drippings and stir constantly for about 2 minutes until the roux turns lightly golden. Pour the chicken broth in a steady stream, whisking continuously to keep the gravy smooth and lump-free. Let it simmer until thickened, then stir in the cream.

Five: Return Everything to the Pan and Simmer

Place the seared pork chops back in the skillet and spoon the creamy gravy over each one. Add the caramelized onions and bell peppers around the chops. Cover the pan, reduce heat to low, and simmer gently for 15 to 20 minutes until tender all the way through. Serve warm with plenty of gravy spooned over the top.

On my first batch, I moved the chops too early because they were sticking slightly, and I got nervous. Pulling them before the crust sets fully tears the coating away from the meat, leaving it in the pan instead of on the chop, which means the drippings are weaker and the gravy that follows has less depth. A properly preheated pan with hot oil and butter means the chops release cleanly on their own when the crust is ready.
