I am sharing with you my favorite recipe for strawberry cake because I also want to promote making small batches for those who live alone, live with their partner, or even for students who want to try making desserts for themselves. For this recipe, I am using homemade strawberry jam instead of fresh strawberries to make it a more creative and fun way of making. Using strawberry jam will not make this cake less flavorful because the jam I use is literally made from fresh strawberries. They are even more flavorful than the fresh ones because I already customized the flavor.

Prepare your stand mixer. Start placing the egg whites and whisk until you see a foamy and fluffy texture. In a separate bowl, whisk the egg yolks and sugar.
Three: Combine the Mixtures
After whisking the egg yolks and sugar, do not remove them from the mixer. Add the whisked egg whites into the bowl and mix on low setting until they are fully combined. This way, the cake mix will have a light consistency and a perfect result.
Four: Add the Rest of the Ingredients
Start adding the rest of the ingredients while combining the first two mixtures. Make sure to blend them in.

Five: Add The Jam Filling

Make small holes in the cake using a wooden stick to help the strawberry jam get directly into the cake. Do this to add more moisture and strawberry flavor.
After making small holes, cut the cake into half and spread the strawberry jam on one half of the cake. After spreading, place the other half on top to make a two layer cake.

Six: Add the Meringue Icing
On top of the cake, add some more strawberry jam and follow by adding the meringue icing making sure it covers up the whole cake.
For the finishing part, add the strawberry powder by placing it into a sieve. Sprinkle it all over the cake and enjoy your strawberry cake.
