These easy zucchini chocolate chip muffins use grated, squeezed fresh zucchini with cinnamon-and-nutmeg almond flour batter. Dark chocolate chips are folded through and scattered on top for a moist, lightly spiced small-batch bake. This ratio is perfect for anyone who wants dessert on a small scale.

Zucchini in a chocolate chip muffin was something I was skeptical about the first time I heard the idea because putting a vegetable in a dessert batter felt like a compromise nobody asked for. The zucchini is completely invisible in the finished muffin, which is either the best trick in baking or the easiest way to feel like you got away with something.

Zucchini Squeeze Matters

At six muffins, the ratio of zucchini moisture to almond flour is more sensitive than in a full batch of twelve, and even a small amount of excess liquid from an under-squeezed squeeze pushes the batter over the right consistency, and the muffins come out wet and dense rather than moist and light. The smaller quantity of grated zucchini also drains faster than a full batch would, so the squeeze is shorter but still needs to be thorough rather than a single quick press.

Rest Before Transferring

Almond flour muffins are significantly more fragile when hot than wheat-based muffins because they lack a gluten structure to hold them together at high heat, and lifting them from the tin immediately out of the oven almost always causes the muffin base to pull away or crumble rather than release cleanly. Creamy veggie casserole with bacon, cauliflower rice cheese, and sauerkraut and sausage is a hearty small-batch dish that pairs perfectly with these muffins.

Easy Instructions for Creating Chocolate Chip Zucchini Muffins

This small-batch zucchini muffin recipe uses almond flour, grated and squeezed fresh zucchini, brown sugar sweetener, melted coconut oil, and dark chocolate chips folded through the batter and scattered on top.

Must-Have Tools for Your Kitchen

  • Muffin Tin: Use only 6 holes, lined with paper muffin liners.
  • Cheese Grater: Coarsely grate the zucchini before draining.
  • Paper Towels: Squeeze the grated zucchini dry before adding it to the batter.
  • Silicone Spatula: Gently folds the wet and dry ingredients together without overmixing the smaller batch.

Key Ingredients:

  • Zucchini: Grated and squeezed completely dry before it goes anywhere near the batter.
  • Sugar-Free Dark Chocolate Chips: Fold in a larger amount, then reserve a smaller tablespoon to scatter over the tops before baking.

Dry Ingredients:

  • Almond Flour: The batter’s gluten-free base.
  • Baking Powder: Gives the batter its rise.
  • Ground Cinnamon: Adds warmth to these muffins alongside the nutmeg.
  • Ground Nutmeg: A small amount that adds depth to the spice blend.

Wet Ingredients:

  • Refined Coconut Oil: Melted and cooled slightly before it goes into the bowl.
  • Almond Milk: A small amount that loosens the wet mixture.
  • Egg: Binds the batter and gives the muffins their structure.
  • Brown Sugar Sweetener: Dissolve fully in the wet mixture before adding the dry ingredients.

Detailed Directions for Zucchini Chocolate Chip Muffins

One: Preheat and Drain the Zucchini

Preheat the oven to 350°Fahrenheit (180 °Celsius) and place paper muffin liners into 6 holes of a standard muffin tin. Grate the zucchini on the coarse side of a cheese grater, wrap it tightly in cheesecloth or several layers of paper towels, and squeeze firmly over the sink until you remove all excess moisture. Set the drained grated zucchini aside.

Two: Mix the Dry and Wet Ingredients

Whisk the dry ingredients in a medium bowl until evenly combined and lump-free. In a separate small bowl, whisk together the melted coconut oil, almond milk, egg, and brown sugar sweetener until the sweetener dissolves and the mixture is smooth, then stir in the drained grated zucchini until evenly incorporated. Both mixtures are now ready to combine.

Three: Combine, Fill, and Top

Pour the wet mixture over the dry ingredients and fold gently with a spatula until just combined, then scatter in the chocolate chips and fold through with two or three more strokes, stopping as soon as no dry flour is visible. Spoon the batter evenly between the 6 lined muffin holes, filling each one 2 to 3 tablespoons full. Scatter the reserved chocolate chips across the top of each muffin.

Four: Bake and Cool

Bake for 28 to 30 minutes, checking at 28 minutes since the smaller batch can set a minute or two faster than a full dozen. A toothpick inserted into the center of a muffin should come out completely clean when they are ready. Cool briefly in the tin, then transfer to a rack to cool fully.

Tested and Noted by Zuzana

Stop as soon as no dry flour is visible, and give the batter one or two more strokes at most; that’s the standard to hold to at this quantity. For a crisp small-batch condiment worth keeping in the fridge alongside these muffins for the week, my pickled cucumber salad is the right choice.

  • Squeeze the grated zucchini a second time after the initial press. A second firm squeeze removes additional liquid that releases as the zucchini sits, and removing that extra moisture makes a visible difference to the final muffin texture.
  • The egg works best at room temperature rather than cold from the fridge. A cold egg takes longer to incorporate fully into the wet mixture and can leave small streaks in the batter that affect how evenly the muffins bake across all six.
  • Place the reserved chocolate chips on each muffin top deliberately rather than scattering them randomly across the whole tin. Two or three chips per muffin ensures every one gets visible chocolate on the surface rather than a few muffins getting most of the topping.
  • The cinnamon and nutmeg quantities in this recipe produce a mild spice note. If you prefer something more pronounced, increase the cinnamon to three-quarters of a teaspoon before mixing, and taste the combined dry ingredients before adding anything wet.

Common Questions Answered

What Are the Perfect Pairings for These Easy Zucchini Muffins?

These muffins work as a breakfast, a snack, or a light dessert and pair naturally with a protein or a fresh side for a complete small-batch meal. Marinated grilled chicken with herbs is a great main to start with. Blue cheese salad and Kale and Lemon Salad provide freshness to the spread.

What Are the Proper Storage Tips for Zucchini Muffins with Chocolate Chips?

Store fully cooled muffins in an airtight container at room temperature for up to 3 days. The zucchini in the batter keeps them moist throughout the storage window. For longer storage, refrigerate for up to 5 days and bring to room temperature for 10 minutes before eating.

How Do I Freeze These Easy Zucchini Chocolate Chip Muffins?

Cool completely, wrap each muffin individually in plastic wrap, and place in a freezer-safe bag for up to 2 months. Thaw at room temperature for 30 to 40 minutes before eating. Do not microwave from frozen, as the chocolate chips can overheat and the muffin texture becomes uneven.
