Pecan Tart Recipe

This pecan tart has a buttery cream cheese almond flour crust and a rich, glossy pecan pie filling that sets firm and slices cleanly. The cream cheese crust gives the dough a press-friendly quality that an all-purpose flour crust doesn’t, and the allulose in the filling caramelizes without crystallizing as it cools.

I have always held pecan pie to a high standard because a filling that doesn’t set properly or a crust that crumbles on the first slice ruins the whole thing before it even gets to the plate. The glossy pecan filling sets exactly as it should after chilling, and the first slice out of the tart pan looked so good I photographed it before I touched it.

Why Allulose Works

Most alternative sweeteners, including brown sugar, erythritol, and monk fruit blends, crystallize as the pecan filling cools, creating a grainy, firm texture instead of the smooth, glossy set this tart is built around. Before having this for dessert, try oven-fried pickles or colorful pickled Chinese radish for a tangy, crisp contrast to the pecan filling.

Crust Dough Requires a Full Hour in the Fridge

The cream cheese in the tart crust dough needs at least one hour in the fridge to firm up before the dough is workable enough to roll and press into the tin. Without full chilling, the cream cheese stays too soft, and the dough sticks to the parchment, tears during transfer, and won’t hold its shape.

Easy Instructions for Creating Pecan Tart Recipe

This small-batch pecan tart recipe uses a cream cheese almond flour crust chilled for one hour and a buttery allulose filling with chopped pecans stirred through and whole pecan halves arranged on top.

Must-Have Tools for Your Kitchen

  • Food Processor: Blends the dry crust ingredients, then processes the cream cheese and egg into a smooth dough ball in this small quantity.
  • Plastic Bag: Holds the dough while it chills evenly.
  • 6-Inch / 15cm Tart Tin: A larger tin spreads the crust too thin and the filling layer too shallow to bake and set correctly.
  • Saucepan: Melts the butter, cream, allulose, vanilla, and xanthan gum together over medium heat.

Key Ingredients:

For the Tart Crust:

  • Fine Almond Flour: Gives the crust a clean, pastry-like texture.
  • Coconut Flour: Adds a small amount of extra binding structure to the cream cheese dough.
  • Xanthan Gum: Half a teaspoon, replacing the traditional all-purpose flour in the crust.
  • Baking Powder: A quarter teaspoon for a slight lift in the crust.
  • Salt: Balances the sweetness of the pecan filling and the crust’s buttery flavor.
  • Cream Cheese: Softened to room temperature before processing.
  • Egg: One small egg that binds the dough into a ball when processed with the cream cheese.

For the Pecan Tart Filling:

  • Eggs: Two large eggs, brought to room temperature before the tempering step.
  • Unsalted Butter: Melted with the cream and allulose as the rich base of the pecan tart filling.
  • Heavy Cream: Combined with the butter in the saucepan to form the filling’s rich base.
  • Allulose: This specific sweetener is required and cannot be swapped.
  • Vanilla Extract: Added to the saucepan mixture.
  • Xanthan Gum: Gives the filling its smooth, glossy body and helps it set cleanly.
  • Pecans: Roughly chopped and stirred into the finished filling mixture before pouring.
  • Whole Pecan Halves: Arrange whole pecan halves on top before baking.

Detailed Directions for Pecan Pie Tart

One: Preheat and Make the Crust Dough

Preheat the oven to 350°Fahrenheit (180 °Celsius). Pulse all dry crust ingredients in a small food processor, then add the softened cream cheese and egg and process for 10 to 30 seconds until a smooth dough ball forms. Seal in a zip-lock bag and refrigerate for at least 1 hour.

Two: Roll and Line the Tart Tin

Remove the dough from the fridge and rest at room temperature for 5 minutes. Roll it out between two sheets of parchment until large enough to line a 6-inch tart tin. Flip into the tin using the bottom parchment as support, press into the base and sides, peel the parchment away, and trim the edges.

Three: Make the Filling and Assemble

Bring the butter, heavy cream, allulose, vanilla extract, and xanthan gum to a boil in a small saucepan over medium heat until the allulose dissolves, then remove from heat. Temper the room-temperature eggs by slowly whisking in 2 tablespoons of hot liquid first, then add the rest gradually while whisking, and stir in the chopped pecans. Pour the filling into the prepared crust.

Four: Top, Bake, and Cool

Arrange the whole pecan halves evenly across the top of the filling. Bake for 35 to 40 minutes, checking at 35 minutes, until the edges are set and only the very center has a slight wobble. Cool completely before slicing into 5 portions, as the filling continues to firm up as it cools.

Tested and Noted by Zuzana

Most people rush the tempering step, and it scrambles the eggs if you do. I poured the full hot butter-and-cream mixture into the eggs too quickly on the first batch and ended up with sweet scrambled eggs in the filling bowl rather than the smooth, glossy liquid that sets properly into a clean pecan tart filling. For a fresh first course that cleanses the palate before this rich pecan tart arrives, my kale and lemon salad is the right opening course to pair with it.

  • Allulose is important in this filling and not just a sweetener preference. It melts and sets smoothly without crystallizing when chilled, which matters even more in this smaller batch. Swapping it for another sweetener may result in a grainy or overly firm filling.
  • You can make the tart crust dough up to 24 hours ahead and keep it sealed in the resealable bag in the fridge. The dough rolls more cleanly after a longer chill than after the minimum 1 hour, making this one of the best advance-prep opportunities in any small-batch baking recipe.
  • Arrange the whole pecan halves deliberately before the tart goes into the oven rather than scattering them randomly. Since the tart slices into 5 portions, place the pecans so each slice gets an equal share, so every portion looks finished and intentional rather than uneven.

Common Questions Answered

What Are the Perfect Pairings for Mini Pecan Tarts?

Sheet-pan salmon and veggies make a light, elegant main course that doesn’t compete with the richness of the pecan filling. For a heartier main before the tart, the beef rump roast crock pot runs itself all day and is ready right as the tart finishes cooling; the stuffed bell peppers without rice make a satisfying main with very little effort, and the spicy chicken fries work as a crunchy appetizer course before the pecan tart closes the meal.

What Are the Proper Storage Tips for Pecan Pie Tartlets Pastry?

Store the cooled tart covered in the fridge for up to 4 days. The filling firms up further in the fridge, and cold slices are just as satisfying as the room-temperature version. If you prefer a softer filling texture, bring a slice to room temperature for 10 to 15 minutes before serving.

How Do I Freeze This Pecan Tassies Recipe?

Freeze fully cooled individual slices, tightly wrapped in plastic wrap and placed in a freezer-safe bag or container. They keep for up to 2 months. Thaw overnight in the fridge, not at room temperature, for the cleanest texture when serving.
